Philippe Valette, based in Chaintré, is a cult figure of the southern Mâconnais. He farms old vines organically and ages his wines on full lees for years, sometimes bottling only five or more vintages after harvest.
The Valette Chardonnays are dense, profound, almost Jura-like in their oxidative poise — unlike any other Pouilly-Fuissé.
